So you still want summer, huh? We get it: you want to be surfing the waves. Or scaling the sides of the Red River Gorge without a sweater. Maybe just making sand angels would do the trick. Whatever it is, you want a little more summer – and so do we.
Enter VerMints PepperMint (N)Ice Cream. It’s a cool treat with a bit of pep. Nothing says summer like it.
Delicious, healthy (ish), and summery. Yup. And of course, it’s vegan, too.
INGREDIENTS
1 14-oz can full-fat coconut milk
1 cup vegan milk (almond milk, soy milk, more coconut milk… mmm)
1 cup cashews (soaked overnight)
¼ maple syrup or any liquid sweetener
¼ cup dark chocolate chips (optional – if you can resist chocolate chips)
5-10 VerMints Peppermints
DIRECTIONS
1. Crush the VerMints. How? Simple: Rapid pounding with rolling pins to “Flight of the Bumblebee” is suggested. Of course, choppers, blenders, or any other crushing ideas you may have are warmly welcome.
2. Blend the rest of the ingredients until well-combined.
3. Add crushed VerMints.
4. Pour mixture into an ice cream maker and let churn. No ice cream maker? Arm strength will save the day! Pour mixture into a chilled metal bowl and put the concoction in the freezer, whisking every hour until you have peppermint soft-serve goodness.
Voilà: Summer!
