Are you sick of rich, heavy, succulent holiday food yet?

Hopefully your leftovers are almost gone, you’ve been reaping the benefits of peppermint tea this week (if you haven’t, read this blog post immediately), and you’re feeling ready to get back in the kitchen and whip up some delicious New Year’s Eve party food!

After all the stuffing, mashed potatoes and desserts that have been consumed over the past couple months, we’re guessing you’re probably ready for a little carb break. So we’re going to keep it light with healthy appetizers to get you geared up for all your 2016 health goals.

Cue cauliflower. This cruciferous veggie is one of the world’s healthiest foods. It’s crazy high in vitamin C, K, and B6, but our favourite thing about cauliflower is it’s incredible capacity to mimic some of our favorite junk foods. Yes!

The following is a list of recipes that will knock the socks off your New Year’s Eve party guests (and keep their waistlines in tact!).

Mini Cauliflower Pizzas

Cauliflower Wings (vegan & gluten-free!)

This recipe from Evolve Vegan made us feel terribly guilty — until we remembered we weren’t actually eating chicken wings. We’ve never felt so happily foolish.

Quinoa Cauliflower Meatballs (vegan & gluten-free!)

These vegan “meatballs” are so good, you can totally skip the pasta and serve them as finger food. Just throw a little marinara on the side for dipping and you’re ready to party!
